Methodology
Premises scoring 0, 1 or 2 on the Food Hygiene Rating Scheme, positioned from the FSA register. A map of all ninety thousand rated premises would be a map of where restaurants are; a map of the ones that failed is a different question. A low rating reflects one inspection on one day and premises re-rate after improvement.
